Hi, my name is Isabel and I’m addicted to salsa verde. And cheese. And dips of all kind. Really pretty much any party food or appetizer that involves all of those things. Oh, and how could I forget to mention the vehicle used to eat it all – tortilla chips. Definitely the best combo.

Especially if you decide to get all classy and make your own like these Homemade Tortilla Chips which I HIGHLY recommend.

But enough about chips. Let’s talk about this dip.

This easy, cheesy and super creamy Salsa Verde Queso Dip made in the slow cooker is the perfect no-fuss appetizer for your next game day party! (gluten free, vegetarian, low carb, crock pot)

A few things I love about this queso dip.

  1. It’s made in the slow cooker, which means it’s easy to make. No fuss.
  2. It uses THREE different kinds of cheese – Vermont White Cheddar, White American and Pepperjack.
  3. It’s creamy. (Thanks, cream cheese.)
  4. The salsa verde adds a subtle brightness that just makes the dip more flavorful than your average cheese dip.

One of my favorite brands of salsa verde is Herdez. Made with simple, authentic ingredients, it’s my go-to when I don’t feel like making my own.

BUT if you want to learn to make your own, I say go for it! It’s so easy and versatile, once you make it, you’ll wonder where it’s been your whole life. Here’s a recipe for my homemade easy salsa verde.

Salsa Verde Queso Dip

This easy, cheesy and super creamy Salsa Verde Queso Dip made in the slow cooker is the perfect no-fuss appetizer for your next game day party!

Ingredients

  • 8 oz cream cheese
  • 3/4 cup milk
  • 4 oz Vermont white cheddar cheese
  • 8 oz pepperjack cheese
  • 4 oz white american cheese
  • 1/2 cup salsa verde
  • 1 jalapeno, finely diced

Instructions

  • Add all ingredients except diced jalapeno into the slow cooker. Cover and cook on high for 1 hour.
  • Uncover and mix the dip together using a whisk until the cheese is mostly smooth. Cover and cook for another 30 minutes.
  • Mix in diced jalapeno and top with more diced hot peppers. Eat up!

    I only have shredded cheese. Do you believe it will melt the same or should I half the time?

      Hi Candice! I would really recommend block cheese because pre shredded cheese has a coating that keeps it from clumping together in the bag, making it harder to melt. I think it should be okay but the texture might be off.

    Can I make this in a 6qt crockpot without doubling? Not sure if that’ll be too big of a pot for this recipe. Does size of the crockpot matter?

    I want to put this on before I leave for work for a game night after work. I leave for work at 8:30am and game night is at 7pm. If I leave on warm all day, will it burn?

    I am wanting to serve this for a nacho bar. How long can it sit out without hardening? I don’t really like the look of a crockpot on the buffet.

      Unfortunately not very long. Since there’s a good amount of cheese in there, it will start to get that little hardened queso film on the top.

    This was awsome. Winter olympics potluck ar work. I put the jalapeños on the side and added non spicy greeen peepers to the pot. I got rave reviews. Will be making again as soon as there is another gathering. Maybe add more milk next time since crockpot was on for two hours. And tripple ingredients as well for a crowd.

    I can’t find white American in any of much any local stores. Do you have suggestion for a substitute besides a velveta?

      Go to the deli counter. Odds are they’ll have it. Land O’ Lakes is the most common for queso.

    Have you ever tried doubling the recipe? I will be using a 5 qt. Crock and wasn’t sure if it would fit/how it would turn out if I doubled it.

      No, you could melt everything over the stove on low heat, just be careful not to burn the cheese. Or you could also do it in the microwave.

    I’m so glad I found this recipe… again! I made this last Christmas to satisfy the munchies between our typical heavy breakfast and heavy dinner. Everyone gobbled it up so fast, no one was hungry at dinner time. This has been at the top of the request list for our family Christmas this year, and because it’s so addictive, everyone voted to have this queso AS the evening meal, instead of the appetizer. That’s saying a lot considering we usually go all out with our Christmas dinners. This will be in our extended family meal rotation from now on. My mouth is watering just thinking about it!

    Yum! This queso is so delicious. I didn’t have white american so I used 8oz white cheddar but will definitely do the white american next time. I added chopped pickled jalapenos for some extra spice! Love this recipe!
