CHARRO BEANS

Charro Beans (Frijoles Charros) are Mexican-style beans that go great as a side dish or as a full meal served with some flour tortillas or jalapeño cornbread.

- pinto beans - bacon - onion - tomatoes - jalapeno - garlic - chicken stock - chipotle pepper - chicken stock - oregano - cumin - sea salt - bay leaves - cilantro - your favorite toppings

Ingredients Needed

Place the beans in a large bowl and cover them completely with water. Let them soak for about 4-8 hours.

Cook some diced bacon in a large dutch oven over medium-high heat until all the fat is rendered. Add in onions and jalapeños and cook until translucent.

Add in garlic, tomatoes, chipotle pepper, and cook until mixture is slightly thick. Add in chicken stock, seasonings, soaked pinto beans, and bring to a boil cook for 35 minutes.

Uncover, turn up the heat and cook for another 35 minutes until thickened. Serve with your favorite toppings!
