CORTADILLO

Cortadillo (Mexican Pink Cake) is a soft and pillowy pan dulce that’s known for its vibrant pink icing. Topped with fun colorful sprinkles!

Let’s get started!

- eggs - sugar - vanilla extract - oil - all-purpose flour - baking soda - salt - milk - confectioners' sugar - almond extract - food coloring - sprinkles

Ingredients Needed

Make the batter by mixing the wet ingredients and sifting the dry ingredients in separate bowls. Then slowly add dry ingredients to wet ingredients until smooth.

Pour the batter into a prepared baking pan and bake at 350℉ for 40-45 until nicely golden.

Make the icing by mixing together the confectioners' sugar, almond extract, and some milk. Then add about 5 drops of food coloring.

Spoon the icing onto the top of the cake and cut into triangles to serve!
