Gorditas are either pan-cooked or fried depending which region they’re from in Mexico
- Mexican chorizo - olive oil - onion - masa harina - water - salt - queso fresco - cilantro lime crema
Add potatoes and cook everything for 5 more minutes. Make the dough by mixing masa harina, water, and salt. Form the dough into balls and flatten.
Place the flattened dough in a hot skillet and cook for about 2 minutes, flipping every 15 to 30 seconds. Let gorditas cool, then cut a slit down the edge of the tortilla to create a pocket.
Fill the gorditas with papas con chorizo filling, then top with the cilantro lime crema and a sprinkle of queso fresco!
