Lentejas is a traditional Mexican soup made from brown or green lentils. This soup is full of nutrients and great for an everyday comforting dinner!

In a large Dutch oven over medium-high heat add olive oil and cook the carrots. 


Make the tomato mixture by blending tomatoes, onions, jalapeño, garlic, and seasonings until smooth. 


Add the blended tomato mixture and the rest of the ingredients to the pot. Stir to combine, bring to a boil, reduce heat to low, and cover. 


Cook for 30 minutes until lentils are soft. Serve warm with fresh lime juice and enjoy!
