Make the sauce: Add all ingredients in a blender or food processor and blend until smooth. Transfer to an airtight container, cover and refrigerate until ready to use.
Make the cabbage: Add all ingredients to a large mixing bowl and toss to combine. Cover and refrigerate until ready to use.
Prepare the grill: Spray your grill rack with nonstick cooking spray. Or you could also put some olive oil on a paper towel and wipe the grill rack. Cover and preheat to medium-high heat.
Grill the burgers: Brush one side of the turkey patties with cooking oil and place on the grill rack, oiled side down. Cover and cook for 4 minutes. Brush the tops of the patties with cooking oil, flip them over and cook for another 4 to 5 minutes.
Assemble the burgers: Spread 2 tablespoons chipotle sauce on the top and bottom of each bun. Top the bottom bun with a grilled turkey patty, add a handful of cabbage and then the top bun.
Notes
To cook burgers on the stovetop, preheat a saute pan or griddle over medium-high heat. Spray with cooking spray or olive oil, add turkey patties and cook for about 4-5 minutes per side, or until the patties reach an internal temperature of 165°F.
