Heat olive oil in a large skillet over medium-high heat.
Add onions and garlic. Cook for 3 minutes, until onions have softened and are translucent.
Add nopales and cook for 3 more minutes.
Add eggs and cook, stirring every 10 seconds, until light, fluffy, and scrambled to your liking.
Season with salt and pepper to taste, and serve immediately
