Filled with colorful bell peppers in a light yet creamy chili tomato sauce, this Healthy Chicken Fajita Pasta is perfect for those busy nights when you need to get something delicious yet healthy on the table quickly.
Cook the pasta according to the directions on the package.
In a large bowl or plastic storage bag, combine sliced chicken breast, salt, pepper, cumin powder, chili powder, ancho chili powder, onion powder and smoked paprika. eat large skillet with 2 tbsp olive oil. add in sliced chicken breast, minced garlic and spices. cook for 8 minutes.
Heat a large skillet or pot with olive oil over medium-high heat. Add in minced garlic and cook for 30 seconds until fragrant.
Add in seasoned chicken and cook for 8 minutes, flipping chicken pieces occasionally.
Add in sliced peppers and cook for 10 min, or until peppers have softened.
Mix in tomato paste and remove the chicken fajitas from the heat.
Add in the cooked pasta, chicken stock, Greek yogurt, shredded cheese and throughly mix together. Taste and season with more salt, if necessary.
Top with a pinch of red pepper flakes, cilantro leaves and more cheese, if desired. Serve and enjoy!
