- chicken thighs - tomatillos - green chile peppers - onion - garlic - chopped cilantro - lime juice
Save some time by buying a cooked rotisserie chicken and shredding it at home!
Place the tomatillos and peppers on a baking sheet with foil and broil on high. Remove them from the oven, loosely cover the baking sheet with foil help them steam, and skin.
Add the roasted peppers and tomatillos, onions, and minced garlic to a blender and blend until smooth.
Place the chicken in a large pot over medium-high heat. Sear it on all sides for about 20 minutes. Pour the chile verde and water all around the chicken in the pot cook for 30 minutes.
Just before it’s done, stir in the lime juice and cilantro. Add more salt as necessary, then serve!
