This chicken enchilada soup is a quick and easy way to make a delicious and flavorful soup in just 30 minutes that will keep you full and satisfied!

- enchilada sauce - chicken - masa harina - black beans - tomatoes - diced green chiles - jalapeno - onion - broth - cheese - garlic - salt - oil - your favorite toppings

Ingredients Needed

Cook some onions, jalapeños, and garlic in a large pot until the onions become translucent.


Add the masa harina and cook for 1 minute. Stir in chicken, enchilada sauce, broth, canned goods, and salt. Cook everything for 10 minutes or until the soup begins to simmer.


Once the soup is simmering, remove it from the heat and stir in the cream cheese. 


Once cream cheese fully melts serve with avocado slices, tortilla strips, cheese, or any of your favorite toppings!
