Pozole Verde is a comforting Mexican stew filled with shredded chicken and hominy in a delicious green chile broth made from tomatillos, jalapeños, and cilantro. It’s easy to make, hearty, and ready in only one hour!

- olive oil - ground beef - tomato paste - chili powder - ground cumin - kosher salt - garlic powder - onion powder - paprika - dried oregano - shredded cheese - black beans - yellow corn - tortilla chips - your favorite toppings

Ingredients Needed

Preheat oven to 400ºF. Line a large baking sheet with parchment paper and set aside.


Cook the ground beef in a large skillet with the tomato paste, chili powder, ground cumin, salt, and other seasonings until browned.


Layer 1/2 of the tortilla chips on the baking sheet with 1/2 of the ground beef, shredded cheese, black beans, and yellow corn. Then repeat.


Bake in the oven for 4-6 minutes, until the cheese has just melted. Top with desired toppings and enjoy!
