Smoky chipotle tomato bisque

Ready from start to finish in only 35 minutes, this is a healthy and comforting lunch or dinner. (gluten free, paleo, vegetarian, vegan)

- tomatoes - butternut squash - chipotle pepper - can corn - garlic - olive oil - broth - salt

Ingredients Needed

I made it all pretty by swirling in some plain Greek yogurt, dried sage and freshly ground black pepper.

*Quick Tip!*

Preheat oven to 400ºF. Add tomatoes, squash, garlic, corn, oil, and salt to a sheet pan. Toss together and bake for 30 minutes. 


Remove from oven and toss into a blender. Add broth and chipotle pepper. Puree util smooth and season to tasste. 


Serve with warm bread, dollop of sour cream, dried sage and freshly ground black pepper, enjoy!
