These enchilada meatballs are everything you love about enchiladas but with a fun twist! They feature juicy all-beef meatballs made with Mexican spices.

- ground beef - enchilada sauce - panko breadcrumbs - seasonings - eggs - cilantro - green onions - jalapenos - shredded cheese

Ingredients Needed

To get uniform meatballs, use a heaping tablespoon or small cookie scoop to shape them into balls.

*Quick Tip!*

Make the meatballs by mixing together the egg, cilantro, jalapeño, seasonings, breadcrumbs, green onions, and ground beef. 


Use your hands to from the meat mixture into small meatballs. Sear them for 2 minutes on each side until fully cooked. 


Pour enchilada sauce over the meatballs and the shredded cheese. Bake for 10 minutes at 350F.


Garnish with diced avocado, cilantro, and serve with rice!
