For a healthier dish, skip frying the tortillas and just warm them up on the stove.

Add the black beans, chipotle peppers, onions, garlic, broth, salt, and oregano to a blender. Blend until completely smooth.


In a medium pot, add oil and black bean sauce. Cook until the mixture is hot and bubbly.


Place a tortilla into the frying oil and fry for 15 seconds. Dip each tortilla into the black bean sauce, transfer to a plate, and fill with queso fresco.


Serve immediately topped with sliced red onions, fresh cilantro, and Mexican crema!
