Bell pepper nachos

This bell pepper nachos recipe is made with mini bell peppers instead of tortilla chips! It’s Low carb, gluten free and grain free!

Let’s get started!

- mini bell peppers - ground chicken  - olive oil - shredded cheese - diced onions - diced cilantro - spices - seasonings - avocado

Ingredients Needed

For the protein, I mixed some ground chicken with my homemade taco seasoning.

*Quick Tip!*

Set oven to 400 F. To get the peppers ready, just slice off the tops, cut in half, remove the seeds, and set aside.


In a large bowl add ground chicken, spices, and seasonings. Mix together until well combined. Sauté seasoned meat mixture until fully cooked. 


Spoon the cooked ground chicken onto the mini bell peppers. Top the peppers with shredded cheese.


Bake in the oven for 10 minutes, until the cheese has just melted. Top with desired toppings and enjoy!
