Mexican vegetable soup

This Mexican vegetable soup (sopa de verduras) is a hearty and delicious dinner that comes together in 35 minutes!

Let’s get started!

- potatoes - bell peppers - carrots - tomatoes - green beans - zucchini - onion - cilantro - broth - garlic - salt - pepper - olive oil - bouillon  - cumin - oregano

Ingredients Needed

Make the tomato base by blending tomatoes, garlic, onion, bouillon, and water until smooth. 


Sauté the carrots until softened. Then pour in the blended tomato mixture. Add all the remaining vegetables and spices.


Cook on medium-low and simmer for 15 minutes until all vegetables are fork-tender. 


Serve immediately in bowls garnished with lime juice and queso fresco!
