Mexican Red Posole
Let's make posole!
Posole is a comforting Mexican stew filled with shredded pork and hominy in a warm red chile broth.
Rehydrate the dried chiles in hot water and cover until softened.
Blend the rehydrated chiles with some of the chile-soaked water, fresh water, salt, garlic, Mexican chocolate, cumin, and chili powder.
Sear the pork shoulder, then add the blended chile sauce, chicken broth, bring to a simmer, cover and cook for 2-3 hours.
Shred the pork, add hominy and oregano, and cook for a few more minutes.
Serve with finely sliced cabbage, onions, cilantro, radishes, dried oregano, and freshly squeezed lime juice.
