- olive oil - ground beef - Mexican chorizo - egg - white rice - seasonings - celery - carrots - onion - green beans - potato - cilantro - beef broth - tomato paste - your favorite toppings
Add all the ingredients for the meatballs to a large bowl. Mix together with your hands until just combined.
Roll the mixture into 24 meatballs and set aside. Heat a large pot over medium-high heat add olive oil, celery, carrots, onions, and salt cook for 8 minutes.
Add tomato paste, oregano, and ground cumin. Add broth and bring to a boil then reduce to low heat. Drop in the meatballs and cook for 15 minutes.
Add green beans and potatoes to cook for 15 more minutes. Serve with cilantro and lime!
