Season beef with salt and pepper. Cut 4-inch pieces, add to a large skillet with oil, brown, and set aside. 


Cook onions and garlic in the same skillet until fragrant. Add beer, vinegar, lime juice, chipotle peppers, and all spices. Stir and remove from heat. 


Add the seared meat into a slow cooker and pour the liquid mixture on top. Combine, then cover, and cook on low for 8 hours (or high for 5 hours).


Shred the meat and add it back into the slow cooker. Serve and enjoy!
