Caldo de Pollo, or Mexican chicken soup, is a healthy and flavorful soup. It’s an easy and hearty soup that will warm you up from the inside out!

- water - chicken thighs - garlic cloves - bay leaves - potatoes - corn - zucchini - carrots - green cabbage - cilantro - lime juice - kosher salt - your favorite toppings

Ingredients Needed

Start by cooking the chicken in water with garlic cloves, bay leaves, and some salt until cooked through.


Add in all remaining vegetables and cook for 15 minutes, until tender. Remove bones from chicken, shred or cut into bite-sized pieces. 


Add the shredded chicken, chopped cilantro, and lime juice. Serve soup in large bowls and top with your desired mix-ins!
