Mexican Brussels Sprout salad

Ready from start to finish in only 25 minutes, this Mexican Brussels Sprout Salad is the perfect side dish!

- brussels sprouts - corn - feta cheese - radishes - cilantro - lime vinaigrette

Ingredients Needed

Toss in some Mexican chicken, marinated tofu,  or a can of chickpeas for additional protein and to make it a full meal.

*Quick Tip!*

Brush the corn with olive oil and grill until the entire ear of corn is lightly charred in spots.


Assemble the salad by adding the grilled corn to a large bowl along with the brussels sprouts, feta cheese, cilantro, and radishes.


Make the dressing by whisking the ingredients together in a small bowl or a jar. Pour the salad dressing over the assembled salad, then toss gently until fully coated.


Garnish with fresh cilantro and serve immediately or cover and refrigerate!
