This cottage cheese queso is creamy, high-protein, and ready in 5 minutes. Made in a blender with taco seasoning and melted cheese, it’s a lighter twist on classic queso.
Optional toppings: Diced tomatoes, diced green chiles, chopped cilantro, pico de gallo, crumbled chorizo
Instructions
Add the cottage cheese, milk, and taco seasoning to a blender and blend until completely smooth.
Transfer it to a medium microwave-safe bowl and stir in the shredded cheese.
Microwave on high for 30 seconds, stir, and microwave again for 30 seconds. Continue warming and stirring in 30-second intervals until completely smooth.
Garnish with desired toppings and serve immediately.
Notes
If the mixture becomes too thick, stir in a splash of milk to thin it out to your desired consistency.
