Watermelon Salad
This Watermelon Salad is made with cubed watermelon, crumbled feta or cotija cheese, mint leaves and an easy lime dressing that brings everything together!

Ingredients
For the salad

cups
cubed watermelon,
chilled (about 1/2 medium-large fruit)
1/2
cup
crumbled cotija cheese
(or feta cheese)
1/2
cup
chopped red onion
3
tablespoons
thinly sliced mint leaves
1
jalapeño pepper
chopped
For the dressing
2
limes
zested and juiced
2
tablespoons
olive oil
1/4
teaspoon
salt,
plus more to taste
Instructions
In a large bowl, add the watermelon, cheese, red onion, mint and jalapenos.
In a small bowl, whisk together the lime zest, lime juice, olive oil and salt.
Pour the lime dressing into the large watermelon bowl and
gently toss
everything together.
Serve immediately.
Notes
I recommend chilling the watermelon before making the salad.
This salad is best served immediately after making.
