JANUARY 2024 Challenge Recipe
The recipe for this month’s cooking challenge is Lentejas (Mexican Lentil Soup)! This healthy and budget-friendly meal is mad with lentils, carrots, potatoes, and staple Mexican spices. This soup is full of nutrients and great for an everyday comforting dinner!

December Cooking Challenge Recap

Lentejas hold a special place in my heart, this dish reminds me of my grandmother. This recipe turned out to be so delicious and tasty that reminded me of my grandmotherโs ๐คค
Such comfort food! This was a perfect winter recipe.
Very Tasty and it’s a quick, inexpensive, healthy meal. Add some diced avocado, sour cream or shredded cheese to fancy it up if desired. I live at high altitude, 8,500 feet, so it did take much longer to cook the lentils for me.
I made this for the January challenge and it was delicious. This is a super easy recipe and super healthy. I sautรฉed the vegetables in bacon fat (I added celery and extra carrots), used a little green ancho chile seasoning for a little extra kick and topped with a dollop of sour cream. The leftovers were even better the next day. I will definitely be making this again.
The soup is great. The instructions are easy to follow and the format is great. My husband appreciated the nutrition information.

As a child I never liked lentejas but this recipe was so easy to follow so I gave it a try. I ended up loving the recipe, thank you!
