Here’s the thing that bugged me for years: almost every recipe and a lot of restaurants lean on Velveeta. I wanted the real deal. So this one starts with white American cheese from the deli counter, and instead of just dumping everything in a pot, I sauté a little onion and garlic first for real flavor. It’s a little different from the yellow queso you might be used to. It’s made with white cheese, so it comes out creamy and pale instead of orange.

Quick heads up: the dip is not the same thing as the fresh cheese also called queso blanco (the crumbly kind that’s closer to feta). Same name, totally different thing. Here we’re talking about the warm, dippable cheese sauce.

What Cheese to Use

White American cheese is the way to go here. It melts smoother than just about anything else and gives you that classic restaurant texture. You’ll usually find it at the deli counter, so ask for it in block form if you can and cube it yourself. Sliced white American works too if that’s all they have. Just don’t grab the yellow American by mistake, since it’s fattier and tastes different.

If you want a little more flavor, you can swap in some pepper jack or Monterey Jack for part of the American cheese. Pepper jack adds a nice kick, and Monterey Jack keeps things mild and melty. I’d keep white American as the base either way since it’s what makes the dip so smooth.

Sauté the onion in butter until soft, then add the garlic. In a separate saucepan, warm the milk over low heat and whisk in the cubed cheese a little at a time until melted.

  • Skip the pre-shredded cheese. Buy block cheese and cube it yourself. The bagged kind is coated with anti-caking stuff that keeps it from melting smoothly.
  • Go low and slow. Keep the heat low and whisk the whole time. Rushing it over high heat is what makes queso turn grainy.
  • Use whole or evaporated milk. Either one gives you the creamiest, most restaurant-like texture.
  • Too thick? Thin it out. Stir in a splash of milk until it loosens back up. A little salsa at the end works too, and adds flavor.
  • Make it heartier. Stir in cooked chorizo, ground beef, or a scoop of refried beans.

  • Making it for a party? Once it’s melted, pour it into a small slow cooker set to warm to keep it smooth and dippable for a couple of hours.

Ingredients 

  • 1 tablespoon unsalted butter
  • ¼ medium white onion, finely diced
  • 1 clove garlic, minced
  • 1 ½ cup whole milk, plus more as needed
  • 1 pound white American cheese, cut into small cubes
  • 1 (4-ounce) can diced green chiles
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground ground pepper

Instructions 

  • Melt the butter in a small skillet over medium heat. Add the diced onion and cook for 5-8 minutes until softened and beginning to caramelize. Add the garlic and stir, cooking for an additional 30 seconds until fragrant. Remove from the heat and set aside.
  • Heat the milk in a medium saucepan over medium heat until small bubbles form on the edges of the saucepan. Reduce the heat to low.
  • Add the cheese cubes ½ cup at a time and continuously stir into the heated milk with a whisk until they are fully incorporated and melted. Continue this process until all the cheese cubes are melted, making sure to gently and continuously whisk the queso dip until it is smooth and silky.
  • Remove the saucepan from the heat and gently stir in the cooked onions and garlic, the diced green chiles, salt, and black pepper. Stir in any additional milk as needed if the queso becomes too thick.
  • Garnish with chopped tomatoes and jalapeños, and serve with your favorite tortilla chips.

  • Continuously whisking the queso dip can be tedious, but this is an important step so that the queso doesn’t become grainy and lumpy. Slowly and gently melting the cheese is what gives you a smooth consistency.
  • If you prefer your queso a little more runny, add more milk. You could also stir in some salsa at the end to thin it out.

    Whisking is definitely important! I hand whisk for a while, but like you said it kept staying lumpy. I actually ended up using my electric whisk. It turned out, smooth and creamy with just nice small pieces from the green chilies. Delicious. Next time I may even try this with mild rotelle.
