May 2021 Challenge Recipe

The recipe for May’s cooking challenge is my Guacamole Salsa! If guacamole and salsa verde had a baby, you would get this recipe. They’re two of my favorite things and I think you’re going to love it! Here’s why:

  • it’s got the tang of your favorite salsa verde, but with added creaminess thanks to the avocados.
  • it’s ready from start to finish in 15 minutes!
  • serve it with tortilla chips as an appetizer or on top of tacos, fajitas, quesadillas and more!

I love making your recipes. My husband says it’s like going to a restaurant around here…lol.
The other night I made your chili Colorado, and he said it is a must that we have that at least once a week.
I really enjoy your recipes, and congratulations on your pregnancy. Many blessings to You and your family.

I pickled radishes, shallots, and pepperoncini to add to the tacos. Hubs likes lettuce with his tacos. We both loved the recipe and would definitely make it again.

Fish tacos!! I made them exactly as you specified: for our first outdoor party of ten people, first time ever and they were the bomb! in Oakland Ca. You’ll see the ingredients including chipotle lime sauce in a yellow squirt bottle. Thank you for your recipes being so reliable! We had your chicken enchilada soup at Christmas, (made it outdoors,) your yellow cake for birthdays, easy enchilada sauce and fajitas. Never a miss! Pandemic happiness! Granulated garlic and onion–chipotles in adobo–never knew about those! I tell everyone about you. Thank you!
